This recipe originally appeared on Dinners, Dishes and Desserts, and we followed their directions with great results. Peanut butter adds a boost of protein, making these muffins feel a little more like a wholesome breakfast option.

At first, we were surprised — these muffins are not as sweet as a cupcake. That’s because they’re muffins, not cupcakes. Once we remembered that, they tasted wonderful. Warmed briefly in the microwave with a pat of butter, they become irresistible.

Peanut Butter Chocolate Chip Muffins

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 1 tablespoon baking powder
  • 1 cup milk
  • 2 large eggs
  • 2/3 cup sugar
  • 1 cup peanut butter
  • 1/3 cup vegetable oil
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 375°F (190°C). Spray a muffin pan with non-stick spray.
  2. In a large bowl, stir together the flour, salt, baking powder, and chocolate chips.
  3. In a separate bowl, combine the milk, eggs, sugar, peanut butter, and vegetable oil. Mix until just combined — do not overbeat.
  4. Fill 18 muffin cups and top each with a few extra chocolate chips if desired.
  5. Bake for about 14 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  6. Cool slightly, then serve warm or at room temperature. For extra indulgence, spread a little butter on a warm muffin.
