
I made this for the first time about a month ago after my lovely mum gave me a bumper crop of pears from her garden. She has promised more, so I’ll be making it again — but be warned: it’s very, very addictive!
The kids loved it too, so if you have a glut of pears give this recipe a try. If you bottle the cooked fruit in sterile jars it should keep for months. It’s wonderful served warm with a scoop of dairy-free ice cream. You can easily scale the recipe up if you need to use more fruit.
I use coconut oil in this recipe and sweeten with manuka honey — both offer health-supporting properties. When the start of winter is taking its toll, a generous portion of this pudding feels indulgent while still being nourishing.

- 200 ml apple juice
- 2 desert spoonfuls virgin – organic coconut oil, melted
- 2 tsp manuka honey – or ordinary honey if you prefer
- Half tsp cinnamon
- Half tsp mixed spice
- Approx. 6 pears – cored and sliced (keep the peel on)
- 2 handfuls prunes
- Rind of 1 lemon
- Juice of half lemon

Preheat the oven to 180°C (160°C fan). Place the apple juice, melted coconut oil, honey, cinnamon, mixed spice, lemon rind and lemon juice in a baking tray and stir to combine.

Add the sliced, cored pears (keep the skins on) and the prunes, toss so the fruit is coated, then cover the tray tightly with foil.

Bake for 15 minutes with the foil on. Remove the foil and continue to roast for another 20–25 minutes, or until the fruit is soft and lightly caramelised.
