Chocolate Chia Banana Split Parfait Recipe — Layered Dessert Idea

I tried making chia seed pudding recently and couldn’t resist turning it into a breakfast parfait. Chia pudding makes a great base for a morning meal—creamy, filling and full of healthy omega-3s—so I layered it with fruit to make something that tastes like a banana split, but healthier. I used banana and strawberries and added a spoonful of jam on top for sweetness. If you like, you can also add pineapple for a tropical touch; about 1/3–1/2 cup of fresh pineapple chunks or unsweetened canned tidbits works well. Avoid sweetened canned fruit if you want to keep the sugar low.

Ingredients

  • 1 recipe Chocolate Chia Seed Pudding (prepared at least 30 minutes in advance or chilled overnight)
  • 1 large banana, sliced
  • 1/2 cup strawberries, sliced (fresh or frozen)
  • 1/2 cup pineapple, small chunks (optional)
  • 2 tablespoons strawberry jam

Instructions

  • Layer the parfait starting with sliced strawberries, then banana and pineapple, and top with the chocolate chia pudding. Finish with a few banana slices and a dollop of strawberry jam. Alternatively, mix the fruit with the pudding and spoon into serving glasses, then top with jam.

Notes

The chocolate chia seed pudding used here can be prepared ahead; chilling overnight gives the best texture.
