Why many modern crock pot recipes aren’t all-day recipes
If you’ve noticed fewer recipes that call for all-day cooking, there are two main reasons. Modern slow cookers typically run hotter than older models, so ingredients cook faster. Also, most newer units are larger — when a big cooker isn’t filled, it heats more quickly and can overcook food during a long day. This recipe is written to work around those challenges.
Tips for longer slow cooker times
- Fill the cooker at least halfway; two-thirds full is ideal for even, slow cooking.
- If you have a large slow cooker, set a heatproof bowl inside it and place your ingredients in the bowl to extend cooking time. This creates a smaller effective cooking vessel and slows the heat slightly.

- 12 Chicken legs
- Steak seasoning, to taste
- 1 lb Baby potatoes
- 8 Carrots, peeled and cut into pieces
- 6 Ribs celery, cut into pieces
- 2 Onions, cut into pieces
- 1 Cup Chicken broth
- 1/2 Cup Cooking sherry (or additional broth)
- Fresh rosemary sprigs
- Salt and pepper, to taste
Instructions

Place the potatoes, carrots, celery and onions in the bottom of a 6-quart slow cooker.

Pour the chicken broth and cooking sherry (or extra broth) over the vegetables.

Season the vegetables lightly with salt and pepper.

Season the chicken legs with steak seasoning and arrange them on top of the vegetables.

Tuck rosemary sprigs on top for aroma and flavor.

Cook on low for 8–10 hours, until the chicken is tender and the vegetables are cooked to your preference.
