Classic French Toast Recipe: Crispy Edges and Creamy Center

This French toast is my absolute favorite: light and fluffy with golden edges, rich buttery flavor and a hint of cinnamon. After years of tweaking the ratios and technique, I’m convinced this is the best French toast you can make at home.

For a couple of years I survived on a very simple rotation of eggs, toast, coffee and takeout. I lived alone and rarely cooked dinner, but every Sunday I made French toast — a small kitchen ritual that quickly became a specialty. Doing the same dish every week taught me how to make it consistently great.

After all those Sunday mornings, I became picky about texture and balance. This version is thick and fluffy, with a tender interior and crisp, golden edges. A little extra egg gives richness, sugar helps with browning, 2% or whole milk adds creaminess, and a touch of melted butter in the batter intensifies the buttery flavor. Cinnamon and vanilla round everything out.

Use thick-cut white bread so the slices absorb plenty of the custard without falling apart. Fully submerge each slice in the egg-and-milk mixture so it soaks through, then shake off excess before placing the bread on a preheated griddle or frying pan.

Cook each slice a minute or two per side over medium-low to medium heat until puffed and golden brown. Serve immediately with fresh fruit, whipped cream and a good drizzle of maple syrup — simple toppings that complement the rich, cinnamon-kissed toast.

Ingredients

  • 5 large eggs, room temperature*
  • 1 cup milk, room temperature (2% or whole preferred)
  • 2 tablespoons melted butter, cooled to room temperature
  • 1 teaspoon vanilla
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon cinnamon
  • 8-10 slices thick cut white bread
  • Oil or non-stick cooking spray for greasing the pan/griddle
  • Fresh fruit, syrup & whipped cream for serving

Instructions

  • 1. Heat a large frying pan or griddle over medium-low to medium heat.
  • 2. In a large shallow bowl, whisk the eggs until smooth. Add the milk, melted butter, vanilla, sugar and cinnamon, then whisk until evenly combined and no lumps remain.
  • 3. Lightly grease the pan or griddle with about 1 teaspoon of oil or non-stick spray. Dunk each slice of bread into the custard, coating both sides well. Shake off excess batter and place the slices on the heated surface.
  • 4. Cook each slice about 1–2 minutes per side, until puffed and golden brown. Repeat with remaining bread.
  • 5. Serve immediately topped with fresh fruit, whipped cream and maple syrup.

Notes

*To bring eggs to room temperature quickly, place them in a bowl of lukewarm water for 5 minutes.
**To warm milk quickly, microwave in short 10–15 second bursts until slightly warmed.
