  1. Preheat oven to 350°F and line an 8×8-inch baking dish with parchment paper. Lightly spray the parchment with non-stick cooking spray.
  2. Melt the butter in a microwave-safe bowl for 30–45 seconds until hot. Add 3/4 cup white chocolate chips, let sit for 1 minute, then stir until smooth. If needed, microwave an additional 15–30 seconds to fully melt.
  3. In a large bowl, combine the flour, granulated sugar, baking soda, and kosher salt. Stir in 1/2 cup white chocolate chips. Add the eggs, creamy peanut butter, and the melted white chocolate mixture. Stir by hand until the batter is well combined. Spread the batter evenly in the prepared pan and gently press the mini M&M’s over the top.
  4. Bake 30–35 minutes until set and cooked through. Allow to cool completely before drizzling with melted chocolate if desired. Cut into squares and serve warm, at room temperature, or chilled.
