This Week’s Secret To Success

  • This week I’m turning Easter leftovers into fresh, delicious meals.
  • Layered Muffuletta Salad and Ham & Pineapple Dip are excellent ways to use up leftover ham.
  • Spinach Salad with Hot Bacon Dressing will use up those Easter eggs beautifully.
  • If you had pot roast for the holiday, Roast Beef Po Boys are a tasty, comforting option.
  • I buy about 1½ pounds of bacon, cook and chop it all at once, then use it for beans and the spinach salad. If you have plenty of leftover ham, you can swap it in for bacon in many recipes.

In The Know

Not having the right tools can make cooking feel harder than it needs to be.

For years I cooked with whatever I had; prep took longer and results weren’t always what I wanted. Having the right tools speeds prep and consistently improves the outcome, which makes cooking far more satisfying.

Recently I’ve shared a few kitchen tools that save time and deliver great results:

  • Reliable kitchen knives — the first essential purchase for any home cook.
  • A sturdy cutting board I still use daily.
  • Oil for caring for wooden utensils and anything with a wooden handle.
  • A bench scraper — perfect for transferring chopped ingredients quickly.
  • An 8-cup mixing bowl with a spout — ideal for measuring, mixing, and prepping.
  • A good box grater — great for shredding cheese quickly and easily.
  • A 12-inch cast iron skillet — excellent heat retention and versatile for many recipes.

How I’m Setting My Table

Tasty recipes are only part of the dinner equation. Plan your table too — a few favorite pieces make every meal feel more inviting.

Having go-to dinnerware, napkins, and serving pieces makes hosting or family meals effortless and welcoming. Here are a few items I use to set a simple, attractive table.

  • Raindrop glassware
  • Salad bowl set
  • Quality dinner napkins
  • A favorite set of flatware
  • Decorative salt & pepper shakers
  • Cloth cocktail napkins for gatherings
  • Printed or textured placemats to add color
  • Wood serving platters in a few sizes
  • Durable melamine plates for casual meals

Menu 1- Roast Beef Po Boy

A Roast Beef Po Boy is a Louisiana favorite: tender, shredded roast simmered in its own gravy, piled into crusty French bread and finished with creamy horseradish, lettuce, tomatoes, and Provolone. It’s a perfect dinner when you have leftover pot roast.

Dessert This Week

Bright lemon flavor takes center stage this week with an easy Lemon Monkey Bread topped with a lemon curd glaze. Canned biscuits, a touch of sugar, and an unconventional addition—jello—make this dessert surprisingly simple and irresistibly moist and tart.
