Ground Beef Lombardi Casserole

Equipment

Ingredients

  • 1 lb ground beef
  • 1 (14.5 oz) can diced tomatoes with juice
  • 1/2 medium yellow onion, diced
  • 1 (10 oz) can Rotel tomatoes with juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 (12 oz) package egg noodles or other pasta
  • 1 cup sour cream
  • 1 cup cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1 cup parmesan cheese, shredded
  • Fresh parsley for garnish

Instructions

  • Preheat the oven to 350°F (175°C). Grease or butter a 9 x 13-inch baking dish.
  • Bring a large pot of water to a boil and add 2 teaspoons of salt. Cook the egg noodles until al dente according to package directions. Drain and return the noodles to the pot.
  • Stir the sour cream into the hot, drained noodles until they are evenly coated. Spread the sour-cream-coated noodles in the bottom of the prepared baking dish.
  • While the pasta cooks, heat a medium skillet over medium-high. Add the ground beef and diced onion, breaking up the meat as it browns. Cook until no pink remains, then drain any excess grease.
  • Add the diced tomatoes with juice, the Rotel (with juice), garlic powder, onion powder, salt, and black pepper to the cooked beef and onion. Stir to combine and let the mixture simmer for about 15 minutes so the flavors meld.
  • Spoon the beef and tomato mixture over the layer of noodles in the baking dish. Do not stir; keep the layers separate for best texture.
  • Grate the cheddar, mozzarella, and parmesan cheeses, then sprinkle them evenly over the top of the meat. Again, do not stir.
  • Bake the casserole uncovered in the preheated oven for 15–20 minutes, or until the cheese is melted and beginning to turn golden.
  • Garnish with fresh parsley before serving. Let the casserole rest a few minutes, then serve warm and enjoy.
