Ingredients for Pumpkin Oatmeal Muffins
Using organic ingredients and natural sweeteners makes these muffins both tasty and healthier.
- Organic pumpkin puree – Use pumpkin puree, not pumpkin pie filling, which contains added sugar.
- Eggs – Two eggs help bind the muffins.
- Pure maple syrup – Honey works as an alternative natural sweetener.
- Pure vanilla extract – Adds warmth and depth of flavor.
- Gluten-free oats – Regular oats are fine if you’re not avoiding gluten.
- Baking powder – Helps the muffins rise.
- Pumpkin pie spice – Or combine cinnamon, nutmeg, and cloves.
- Cinnamon – For extra spice.
- Himalayan salt – Just a pinch to balance flavors.
- Unsweetened vanilla almond milk – Or any milk of your choice.
- Toppings (optional) – Chopped pecans or walnuts, dark chocolate chips, dried cranberries, or raisins.

How To Make Pumpkin Oatmeal Muffins
Simple steps yield a batch of moist, flavorful muffins you’ll reach for all week.
- Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin with coconut or avocado oil, or use a nonstick spray.
- In a large bowl, whisk together the pumpkin puree, eggs, maple syrup, and vanilla extract until smooth. Set aside.
- In a separate bowl, combine oats, baking powder, pumpkin pie spice, cinnamon, and salt. Stir to distribute the spices evenly, then add to the pumpkin mixture.
- Pour the almond milk into the batter and mix until combined.
- Divide the batter evenly among the prepared muffin cups and sprinkle with your chosen toppings.
- Bake 25–30 minutes, or until the tops are set and lightly golden.
- Allow the muffins to cool slightly before serving, or cool completely before storing.

How Long Will Pumpkin Oatmeal Muffins Stay Fresh?
Store the muffins in an airtight container in the refrigerator for up to 5 days. Enjoy them cold or warm them in the microwave for a few seconds before eating.
Can These Muffins Be Frozen For Meal Prep?
Yes. Let the muffins cool completely, then place them in an airtight container or freezer bag for up to three months. Reheat in the microwave for about a minute when you’re ready to eat. They’re ideal for meal prep and quick breakfasts on busy mornings.

Are These Similar To Banana Oatmeal Muffins?
The method is the same; swap the banana for pumpkin puree. If you want a slightly sweeter muffin without added sugar, try using half banana and half pumpkin puree.
