Ingredients

1½ pounds boneless, skinless chicken thighs — trimmed and patted dry

2 teaspoons kosher salt, divided

1 teaspoon freshly ground black pepper, divided

¼ cup plus 2 tablespoons extra virgin olive oil, divided

2 tablespoons fresh lemon juice

1 tablespoon minced garlic (about 3 cloves)

2 teaspoons sweet or smoked paprika

1 teaspoon red pepper flakes — adjust for heat preference

¼ cup plus 1 tablespoon clarified butter (ghee) for a rich, buttery finish

3 tablespoons Whole30-compatible hot sauce (or your favorite hot sauce)

Notes: For a milder dish, reduce the red pepper flakes and hot sauce. Use chicken breasts if preferred, but thighs stay juicier and develop better crisping in a hot skillet.


Instructions

1. Prepare and season the chicken: Lay the chicken thighs in a single layer in a shallow dish or rimmed baking sheet. Sprinkle with 1 teaspoon kosher salt and ½ teaspoon freshly ground black pepper, rubbing the seasoning into the meat. Set aside while you make the marinade.

2. Make the marinade: In a small bowl combine the remaining 1 teaspoon salt, remaining ½ teaspoon black pepper, ¼ cup of the olive oil, fresh lemon juice, minced garlic, paprika, and red pepper flakes. Whisk until the mixture is well blended and aromatic.

3. Marinate the chicken: Pour the marinade over the seasoned chicken and massage or toss so every piece is coated. Cover and refrigerate for at least 2 hours to let the flavors penetrate; you can marinate overnight for deeper flavor. Bring the chicken to room temperature for 20–30 minutes before cooking to ensure even searing.

4. Sear the chicken: Heat a large cast-iron or heavy skillet over high heat until it is very hot. Reduce heat to medium-high, add the remaining 2 tablespoons olive oil, then add the chicken thighs in a single layer. Sear without moving until the undersides are deeply browned and crisp, about 4 minutes. Flip and cook an additional 5–7 minutes until the chicken reaches an internal temperature of 165°F (74°C) and juices run clear. Transfer the chicken to a plate and tent loosely with foil to rest.

5. Prepare the spicy butter sauce: In a small saucepan over low heat, gently warm the clarified butter until melted and fragrant. Combine the warm ghee and hot sauce in a blender or use an immersion blender in a bowl and blend until emulsified and slightly thickened. Taste and adjust heat or seasoning as needed.

6. Finish and serve: Spoon the spicy butter sauce over the rested chicken, turning each piece to coat evenly. Serve the sizzling spicy butter chicken immediately with simple sides such as steamed vegetables, cauliflower rice, or a crisp salad. Garnish with lemon wedges for extra brightness, and a sprinkle of fresh herbs if not following Whole30 strictly.

Tips: Use a dry, well-heated skillet for the best crust. If you prefer less sauce, reduce the clarified butter or dilute the hot sauce with a tablespoon of olive oil. This recipe is easy to scale and works well for meal prep.
