Avocado, Mango & Corn Salad with Lime-Cilantro Dressing

Ingredients

    cups
    frozen or fresh corn, recommended: fresh
  • 1 14
    oz.
    can black beans, rinsed and drained
  • 1
    red bell pepper, seeded and chopped
  • 1
    ripe avocado, chopped
  • 2
    Roma tomatoes, chopped
  • 1
    ripe mango, chopped
  • 1/2
    red onion, chopped
  • 2
    garlic cloves, minced
  • 1/4
    cup
    chopped cilantro
  • 2
    teaspoons
    hot sauce
  • 1
    lime, juiced
  • 1/2
    teaspoon
    ground cumin
  • 1/2
    teaspoon
    ground chili powder
  • Salt and pepper, to taste

Instructions

  • If using fresh corn, microwave the whole ear for 6–8 minutes. When cool enough to handle, remove and discard the husk, then use a sharp knife to cut the kernels off the cob.
  • In a large bowl, combine the corn, black beans, red bell pepper, avocado, tomatoes, mango, red onion, garlic, cilantro, hot sauce, lime juice, cumin and chili powder. Season with salt and pepper to taste.
  • Let the mixture rest at least 15 minutes so the flavors can meld, then toss gently and serve. Enjoy!
