Best Low Carb Coating for Scotch Eggs
There are several low‑carb coating options: crushed pork rinds, almond flour or coconut flour. If you use almond or coconut flour, lightly spray the coated surface with oil so it browns and crisps in the air fryer. A thicker sausage layer helps prevent splitting during cooking; if you make thicker sausage shells, reduce the amount of boiling time for the eggs and increase cooking time so the sausage cooks through.

Can You Freeze Scotch Eggs?
Yes. Scotch eggs freeze and reheat well, making them convenient for meal prep. Note that a thawed boiled egg will have a slightly different texture than a freshly made one, but they remain tasty. - 1 pound (454 g) uncooked bulk sausage
- 6 hard boiled eggs
- 1-2 raw eggs , beaten
- 1 cup (240 ml) coating choice (crushed pork rinds, almond flour, coconut flour or preferred coating)
- oil spray , for coating

Instructions

Peel the hard‑boiled eggs. Divide the sausage into 6 equal portions (about 75 g / 2.67 oz each).

Flatten each portion into a thin patty large enough to wrap around an egg. Place the egg in the center and wrap the sausage around it, smoothing seams to seal. Repeat with remaining eggs.

Dip each sausage‑wrapped egg in beaten raw egg, then coat with your chosen coating. Spray the outside lightly and evenly with oil.

Air fry at 400°F (205°C) for 12–16 minutes, turning once halfway through, until the sausage is cooked and the coating is crisp.

Slice in half and serve. A smear of mustard on the yolk and a dash of hot sauce are optional but delicious.
