The entire batch contains only 0.4 g of carbs, so a single serving effectively has no carbohydrates. Whether you follow Keto, Carnivore, or Ketovore approaches, this lime curd is a quick, low-carb way to satisfy a sweet craving without derailing your plan.

Although strict Carnivore diets avoid plant foods, many people on those plans still drink coffee and accept small amounts of non-caloric sweeteners and citrus. A little allulose and fresh lime juice give bright flavour without meaningful carbs, and this curd works beautifully on its own or sandwiched between slices of Sweet Bread for an indulgent treat.

How to Make Zero-Carb Carnivore Lime Curd

The only special technique is using a bain-marie (double boiler). Choose a mixing bowl that sits snugly above a pot without touching the water. Fill the pot so the water comes within about 5–6 cm of the bowl bottom — the bowl must not contact the boiling water or the eggs will scramble.

Prepare the ingredients: weigh and cube the butter, and squeeze the juice from half a small lime. Set both aside.

Place the egg yolk in the mixing bowl. Add allulose (or powdered erythritol if you prefer) and gelatin, then whisk briefly to combine. Set the bowl over the pot and bring the water to a gentle rolling boil while stirring continuously.

Add one cube of butter at a time, stirring until each piece has melted before adding the next. This helps to emulsify the curd and create a smooth texture.

Once all the butter is incorporated, continue stirring for an additional two minutes. The mixture should feel hot to the touch but not scalding. Remove the bowl from the bain-marie, stir in the lime juice, and allow the curd to cool while stirring occasionally to keep it smooth.

Transfer the lime curd to a small jar, seal, and refrigerate until set.

Ingredients

  • 1 large egg yolk (about 17 g)
  • 20 g allulose
  • 40 g unsalted butter, cubed
  • Juice of ½ small lime (about 10 g)
  • ⅛ tsp beef gelatine powder

Instructions

  • Place the egg yolk in a glass mixing bowl, add the allulose and gelatine, mix briefly, and set aside for a couple of minutes to hydrate.
  • Set up a bain-marie, ensuring about a 5–6 cm gap between the water and the bottom of the bowl.
  • Place the bowl over the pot and bring the water to a gentle rolling boil while stirring the mixture with a small whisk.
  • Add the butter one cube at a time, stirring until each cube has melted before adding the next. Continue until all butter is incorporated.
  • Stir for another two minutes until the mixture thickens slightly and feels hot but not burning. Remove from heat, stir in the lime juice, and let cool, stirring occasionally.
  • Transfer the curd to a sealable jar and refrigerate until set. Keep refrigerated and use within a few days.

If you prefer, you may substitute powdered erythritol for allulose, but the curd can have a grainy texture because erythritol tends to crystallise.
