  1. Preheat the oven to 350°F (175°C). Grease a 12-cup muffin tin with coconut or avocado oil, or use a nonstick spray.
  2. In a large bowl, whisk together the pumpkin puree, eggs, maple syrup, and vanilla extract until smooth. Set aside.
  3. In a separate bowl, combine oats, baking powder, pumpkin pie spice, cinnamon, and salt. Stir to distribute the spices evenly, then add to the pumpkin mixture.
  4. Pour the almond milk into the batter and mix until combined.
  5. Divide the batter evenly among the prepared muffin cups and sprinkle with your chosen toppings.
  6. Bake 25–30 minutes, or until the tops are set and lightly golden.

Ingredients

  • 1 cup organic pure pumpkin puree
  • 2 eggs
  • 1/4 cup pure maple syrup or honey
  • 1 teaspoon pure vanilla extract
  • 2 cups + 1 tablespoon gluten-free oats or regular oats
  • 1 1/2 teaspoons baking powder
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1/4 teaspoon Himalayan salt
  • 1 cup unsweetened vanilla almond milk or milk of your choice

Optional Toppings

  • Chopped pecans or walnuts
  • Dark chocolate chips
  • Dried cranberries or raisins

Instructions

  • Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin with coconut oil or nonstick spray.
