How to Serve
This soup is filling and satisfying on its own—gluten-free, low-carb, and high in protein—making it a great Whole30 option. If you’re not keeping it low-carb, serve with crackers, biscuits, or a side salad. You can also add egg noodles, rice, or small pasta shapes to make a classic chicken noodle-style soup. I often serve it plain because the large pieces of chicken add body similar to noodles, but any of these additions work well.

- Whole rotisserie chicken (reserve the juices from the container)
- 1 Tbsp extra virgin olive oil
- 3 ½ tsp kosher salt, divided
- 2 large carrots — one halved lengthwise, one sliced into coins
- 1 medium celery stalk, halved lengthwise
- 1 garlic clove, pressed
- 1 Tbsp butter
- 1–1.5 cups green beans, trimmed and halved
- ½ tsp black pepper
- ¼ cup chopped fresh parsley for garnish
Variations
If you prefer, use a homemade roast chicken instead of a store-bought rotisserie—any roasted bird will work. Add an onion to the stock for extra aromatics or swap or add vegetables to suit your tastes: cabbage, small broccoli or cauliflower florets, or other seasonal veg will all be delicious. For a richer soup, stir in a cup of store-bought or homemade chicken stock when assembling.



How to Make Rotisserie Chicken Soup
Break Down the Rotisserie Chicken
1. Pull the meat off the bones, reserving the bones and skin. Separate the meat into two piles: the nicest pieces to add back to the soup at the end, cut into thumb-sized pieces, and the less attractive scraps to simmer for the stock.
2. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Add the bones, skin, and the less attractive chicken pieces and cook, stirring, about 3 minutes to brown slightly.
Add Water and Vegetables
3. Add ½ tsp of the salt and 5 cups of water to the pot and stir. Add the halved carrot, celery, and pressed garlic and bring to a boil. Reduce heat and simmer gently for 15 minutes to extract flavor.
4. Strain the broth through a fine-mesh sieve and discard the solids. Return the strained broth to the pot.
Cook Vegetables and Assemble Soup
5. In a small sauté pan, melt the butter over medium-high heat. Add the sliced carrot coins and ¼ tsp salt and cook, stirring, 3–4 minutes until just tender.
6. Bring a medium pot of water to a boil with 2 tsp salt. Prepare a large bowl of ice water. Blanch the halved green beans in the boiling water for 5 minutes, then drain and plunge into the ice bath to keep them bright and crisp. Drain and set aside.
7. Warm the strained broth over medium heat. Add the shredded reserved chicken, blanched green beans, and sautéed carrots, including any pan juices. Season with the remaining ½ tsp salt and black pepper to taste. Stir in the reserved rotisserie juices for extra richness.
8. Ladle into bowls and garnish with chopped fresh parsley. Serve hot.

Storage and Leftovers
Store leftovers in an airtight container in the refrigerator for up to 4 days. To freeze, cool the soup completely and transfer to freezer-safe containers for up to three months. Thaw overnight in the refrigerator and reheat on the stovetop until warmed through.

- Stir in the reserved rotisserie juices. Serve garnished with chopped parsley.
Notes
For an even more intense flavor, add a cup of chicken stock when assembling the soup.
