Season the roast with salt and pepper, then cut into 1-inch pieces. Heat 2–3 tablespoons olive oil in the Instant Pot on Sauté and brown the pork cubes briefly. You want color on the outside but the meat does not need to be cooked through; browning builds flavor and renders some fat into the pot.
