This salad shines when ingredients are fresh and carefully prepped. It’s an ideal option for outdoor gatherings, poolside snacks, backyard barbecues, or a light starter before dinner. Because it requires no cooking, it’s especially handy on hot days when you want something bright and cooling without heating up the kitchen.

With just a bit of chopping and a quick toss, you can create an elegant appetizer that looks as impressive as it tastes. Serve the salad in endive leaves for individual bites, spoon it into avocado halves for a substantial starter, or pile it onto romaine leaves for a casual, hand-held option. The crisp endive provides a lovely contrast to the soft avocado and mango, while the crab adds a delicate, sweet seafood note.

Tips for buying and storing mangos

Choosing a ripe mango is key to the salad’s success. A perfectly ripe mango will be fragrant and yield gently when pressed. Avoid fruit that is overly soft, bruised, or showing signs of internal spoilage.

  • Look for mangos that give slightly when squeezed—too firm means underripe, too soft means overripe.
  • Refrigerate ripe mangos to slow further ripening; if refrigerated, allow them to sit at room temperature for an hour or two before using for best texture and flavor.

How to dice a mango

  • Stand the mango upright and slice down from the stem end to avoid the large flat pit. You will get two large cheeks and two thinner side pieces.
  • Score the mango flesh in a grid pattern without cutting through the skin, then press the skin outward and slice the diced pieces off with a knife or use the dull end of a chef’s knife to separate the cubes into a bowl.

Once the mango is diced, add the avocado, crab, minced serrano and shallot, chopped cilantro, lime juice, olive oil, and a pinch of salt and pepper. Toss gently so the avocado keeps its shape and the crab flakes remain intact. The result is a colorful mixture of textures and flavors that is instantly appealing.

Arrange the salad in Belgian endive leaves for a refined canapé, or spoon it into halved avocados for an attractive starter or light lunch. Garnish with additional cilantro sprigs and lime wedges for freshness and a pop of color. The combination of ingredients makes each bite pleasantly balanced—sweet and tart, creamy and crisp, with a touch of heat.

Pro tip: To keep endive leaves from rolling on the serving platter, shave a small slice from the outside bottom of each leaf to create a flat base so they sit level. This small step makes plating much easier and keeps the presentation neat for guests.

Crab Mango and Avocado Salad with Chile-Lime Dressing

Light, tangy, and beautifully balanced, this no-cook salad is perfect as an appetizer or a light lunch. Serve in endive leaves, on romaine, or in avocado halves for an elegant presentation.

Prep Time: 30 mins | Total Time: 30 mins | Servings: 20–24

Ingredients

  • 1 large serrano chile, minced
  • 1 small shallot, minced
  • 2 cans (6-ounce each) lump crab, drained
  • 1 small avocado, peeled, pitted and diced
  • 1 large mango, peeled, pitted and diced
  • 2 large limes, juiced (about 3–4 tablespoons)
  • 1/2 cup chopped cilantro
  • 2 tablespoons extra-virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • 4–5 large heads Belgian endive, separated into 20–24 leaves
  • Lime wedges and cilantro sprigs, for garnish

Instructions

  1. In a medium bowl, gently combine the serrano chile, minced shallot, drained lump crab, diced avocado, diced mango, lime juice, chopped cilantro, olive oil, and a pinch of salt and pepper. Toss lightly to mix without mashing the avocado.
  2. Spoon equal portions of the salad into each endive leaf or into halved avocados or onto romaine leaves. Garnish with lime wedges and cilantro sprigs and serve immediately.

Notes

Substitutions: Shrimp can replace crab, and pineapple can be used in place of mango. The salad also works well spooned into avocado halves for a light lunch. Tips: Choose mangos with a slight give when gently pressed and shave a tiny bit from the base of endive leaves so they sit flat on the platter.
