  • French baguette

Tip: It’s convenient to boil the eggs the day before and keep them refrigerated. You can even peel and slice them ahead of time to save prep on the day you serve.

Hard Boiled Egg Crostini Recipe

Ingredients 

  • 1 French baguette
  • butter or olive oil
  • 1/4 cup olive oil
  • 4 hard-boiled eggs sliced lengthwise
  • 5 small radish thinly sliced
  • 1/2 cup arugula
  • Salt and Pepperfreshly ground

Instructions 

  • Slice the French baguette into 1/2″ thick slices.
  • Brush each slice with olive oil or butter and place on a cookie sheet.
  • Toast in a 350°F oven for about 10 minutes or until golden brown. Watch closely to prevent burning.
  • Boil 4–6 eggs to make hard-boiled eggs. Once cool, peel and slice lengthwise into about 1/4″ thick pieces.
  • Top each toasted slice with a little arugula, thinly sliced radish, and a slice of hard-boiled egg.
  • Finish with a drizzle of olive oil and freshly ground salt and pepper. Serve immediately.
